Default Dish alignment / non-working channels

I have recently put a twin LNB on my existing dish (as well as running a 2nd cable). I am not having a problem with receiving some channels.
(Not receiiving channels: 111, 114, 182, 200, 206, 207, 401. 402. 404)
disrupted/partial signal on channels (112, 125, 126, 132, 231).
I assume from reading other threads that this must be an dish alignment issue - my question is how can I rectify it? Should I just fiddle with the LNB whilst someone watches the TV and call out to me when I have a better signal or is there a more 'scientific' solution. What should I look out for when adjusting the the twin LNB?
